Yield: 24 - 26 muffin pan

 

Ingredients filling:

Cooking spray

½ pound of ground beef 93% lean

powdered beef bouillon to taste

1 cup of frozen peas

 

Green olive is optional when setting up the mini pie

 

Ingredients pie batter:

3 eggs

½ cup oil

1 cup of Sprite or 7 UP

1 teaspoon of powdered beef bouillon

1 cup grated parmesan cheese

1 cup all-purpose flour

1 tablespoon baking powder

 

Instructions filling:

Heat a 3-quart sauce pan over medium high heat. 

Spray bottom of the pan with cooking spray, and add ground beef.  Spread the meat around the pan and begin to break it up.  

Cook until it is brown.

Add beef bouillon, mix well.

Add peas and mix until they are defrosted.

Put filling aside.

 

Instructions mini pie batter:

Preheat oven to 350° F.

Line 2 muffin pans with aluminum foil liners.

 

Add the eggs to the blender and blend them for 5 minutes.

Add oil and soda through the blender cover little hole with the blender on. Blend well.

Add beef bouillon and cheese. Blend well

Add flour slowly. As the batter becomes thicker, the blender does not mix it very well, and you might need to stop the blender and mix with a spoon. Blend well.

Finish adding baking powder. Mix well.

 

Instructions to setup the mini pie:

Using a small ice cream scooper, add one scoop of batter in each muffin pan liner. 

Add one olive (optional) and one small scoop of ground beef filling.

Add another scoop of batter to cover the filling.

 

Bake for 20 - 25 minutes or until golden brown and rotate the muffin pans after 10 minutes.

Hi Everyone,

The recipe for today is Empadinha de Carne Moída - Ground Beef Mini Pie, and it is a staple at birthday parties in Brazil. Ground Beef Mini Pie can be served hot or at room temperature.

I serve them at home for dinner with some salad or veggies and fruit, and if I have leftovers, I just pack them up for school lunch! My kids love them…

It is a very easy recipe, just make sure to use an aluminum foil liner, as the Ground Beef Mini Pie can get stuck in a paper liner. Check this recipe out on the recipe page and watch my video on You Tube.
