Ingredients:

1 can condensed milk

1 can creme de leite – table cream

1 cup coconut milk

2 tablespoon butter

 

2 packages Bolacha de Maizena (Brazilian Store)

½ - 1 cup milk

100g shredded coconut (Brazilian Store)

 

Instructions:

Coat the bottom of a 7 x 11 glass pan with butter. Set aside.

 

In a sauce pan add condensed milk, creme de leite, coconut milk and butter.

Cook over medium heat, when it starts to boil reduce heat and sometimes stir it with a wood spoon until it becomes creamy. Set aside.

It takes about 30 minutes to get thicker, and keep an eye on it, as it can boil over the pan.

 

Add milk into a wide mouth container and dunk enough bolacha de Maizena to cover the bottom of the 7 x 11 glass pan, but very quickly, so it does not get soggy. Then add 1/3 of the coconut cream and spread over Bolacha de Maizena. Repeat the layers with bolacha de Maizena and coconut cream 2 more times.

Finish with shredded coconut and refrigerate overnight.

 

Keep refrigerate.

It is a delicious recipe for the summer, as it does not require baking…

I made 3 layers of bolacha Maizena and coconut cream, but you can do 4 layers of them, and the Pavê de Côco will still be tasty!
