Ingredients:

2 cups milk
2 tablespoons of corn starch

1 can condensed milk

1 can creme de leite – table cream

50g shredded coconut (Brazilian store)
 

1 can (20 oz. or larger) sliced pineapple 
14 oz. lady fingers
50g shredded coconut (Brazilian store)

 

Instructions:

Coat the bottom of a 9 x 13 glass pan with butter. Set aside.

 

In a saucepan add milk and corn starch. Mix well until corn starch is incorporated into the milk.  Add condensed milk, creme de leite and coconut.
Cook over medium heat stirring occasionally, when it starts to boil reduce heat and sometimes stir it with a wood spoon until it becomes creamy. Set aside.

 

Drain and cut pineapple into small pieces. Reserve the pineapple juice and pieces separately.

Add pineapple juice into a wide mouth container and dunk enough lady fingers to cover the bottom of the glass pan, but work very quickly, so they do not get soggy. Then add ½ of the pineapple pieces and 1/2 of the cream. Spread well. Repeat the layers with lady fingers, pineapple pieces and cream.

Finish with shredded coconut and refrigerate overnight.

 

Keep refrigerated.
