Ingredients:
1 small onion
3 cups frozen spinach
1 can Creme de Leite – Table Cream (Brazilian Store)
2 tablespoon butter
3 tablespoon flour
1 teaspoon chicken bouillon
9oz oven-ready lasagna (12 sheets)
½ pound shredded mozzarella
3 tablespoons parmesan cheese
Instructions:
Preheat oven to 350°F.
Spray an 8”x 12” glass pan with cooking spray with flour.
Place onion in blender and process until creamy, put it in a container and reserve.
Place spinach with Creme de Leite in blender and process until creamy. Reserve.
Sauté blended onion with butter.
Add flour and mix well. Reduce heat and cook for 2 minutes mixing all the time.
Add spinach cream and chicken bouillon. Mix well until it becomes a thicker cream and it has not lumps.
Assemble lasagna:
1st layer: spread one fifth of spinach cream on the bottom of the glass pan, place a layer of lasagna, add another one fifth of the spinach cream, and one third of mozzarella cheese.
2nd layer: place a layer of lasagna, add another one fifth of the spinach cream, and one third of mozzarella cheese.
3rd layer: place a layer of lasagna, add another one fifth of the spinach cream, and one third of mozzarella cheese.
Finish with one layer of lasagna, one fifth of spinach cream and parmesan cheese.
Bake for 40 minutes or until light golden brown and bubbling.

My son does not like spinach, so this recipe is a great way to hide the spinach from him… to be sincere I sneak spinach in a lot of recipes and he does not even notice!
