Ingredients:

½ Lb. chicken breast cooked and pulled with fork or diced

1 medium potato cooked and diced

1 cup frozen peas cooked and drained

1 cup frozen corn cooked and drained

1 apple cut into strips

1 cup ham cut into strips

1 cup cheese of your choice cut into strips

1 cup raisins

chives

olives

 

1 can Creme de Leite (Table Cream) drained

Mayonnaise

Salt to taste

Pepper to taste

 

1 can potato sticks

Iceberg lettuce gently peel leaves apart (optional)

 

Instructions:

In a large bowl, mix all the ingredients except potato sticks and iceberg lettuce.

Refrigerate for 2 hours or overnight.

When serving use an iceberg lettuce leaf as a bowl, scooping salpicão into it, and topping with potato sticks or put it into a 9 x 13 glass pan and top with potato sticks.

 

Keep leftovers in the refrigerator.

Salpicão de Frango is a versatile recipe, as it can be served either in a glass pan for a potluck or it can be more sophisticated when served in a leaf of iceberg lettuce. Also, it can be served with rice or wrapped into a tortilla for a complete meal.
