Yield:  70 cookies

 

Ingredients:

2 ½ sticks unsalted butter – room temperature

½ cup sugar

¼ teaspoon of salt

2 ½ cups flour

 

300g Goiabada - guava paste

Confectionary sugar for sprinkling

 

Instructions:

In a mixer with cookie paddle, beat butter with sugar and salt until creamy.

Gradually stir in flour until dough is formed.

Cut dough into quarters, and roll each quarter into 1/8” thick between 2 wax paper sheets.

Allow dough to relax for 20 minutes in the refrigerator.

 

Cut guava paste into ¼” strips, and then cut each strip into 6 pieces. Reserve.

 

Cut dough into circles using 2 ½” cookie cutter.

Place guava paste in center and then pinch one side up.  Turn and pinch second and then third to make a triangular shape. Leave a little bit of the filling showing at the top.

Place cookies on a cookie sheet lined with wax paper and freeze cookies for 2 hours before baking or keep frozen for up to 6 months.

 

For baking place cookies on a cookie sheet lined with parchment paper.

Bake cookies at 350°F for 18 minutes or until light golden brown.

Allow to cool down for 2 minutes before removing from cookie sheet and transfer to a cooling rack.

Sprinkle with confectionary sugar.

 

Keep at room temperature in air tight container for up to one week or freeze them up to 3 months.

It can be done ahead and frozen and baked when needed…
