Ingredients cake:

2 cups all-purpose flour

1 tablespoon baking powder

3 eggs (separate egg white from egg yolk)

2 tablespoons butter at room temperature

2 cups sugar

1 cup milk at room temperature (1 minute in the microwave)

 

Ingredients three milks mixture:

1 can condensed milk

1 can milk (use condensed milk can)

1 can coconut milk (use condensed milk can)

100g shredded coconut (Brazilian store)

 

Instructions cake:

Preheat oven to 350°F.

Spray a 13 x 9 baking pan with baking spray with flour.

 

In a bowl mix flour with baking powder and reserve.

In a mixer beat egg white until it forms peaks and reserve.

 

Beat butter and sugar in a mixer.

Add egg yolk (strained) one at the time. Mix well.

Add 1/3 of the milk and beat until fluffy.

Add the rest of the milk and flour mixture.

Turn the mixer off and fold in egg white.

 

Pour cake batter in the prepared pan and bake for 35 minutes or until a toothpick comes out clean.

Pierce cake with a fork.

 

Instructions three milks mixture:

Using a blender, blend the milks and pour over the hot cake.

Sprinkle the cake with coconut.

Allow cake to cool down to room temperature then refrigerate it overnight.

Cut cake into squares and serve.

 

Keep cake refrigerated.

Bolo de Côco Gelado - Cold Coconut Cake

Hi Everyone, 

     

The recipe for today is Bolo de Côco Gelado - Cold Coconut Cake.

It is a very moist and delicious cake and a well known dessert in Brazil.

Couple of years ago on 4th of July, I made the cake, added the three milks mixture, but I did not put in the shredded coconut.  I spread whipped cream on top and I made an American flag with blueberries and strawberries.  My American family and friends loved it! Unfortunately, I do not have a picture to show it to you…
